Green coffee is a type of coffee that has not been roasted, still retains the coffee beans and has a light green color. In contrast to roasted and ground coffee, green coffee contains more natural antioxidants and anti-aging compounds, including polyphenols, flavonoids and antioxidant acids, which help reduce the risk of chronic diseases like diabetes , cancer and cardiovascular disease. This coffee may also help promote heart health, lose weight, and control nutrient intensity. In addition, green coffee also works to reduce stress, increase concentration and help the body increase overall energy.

Various processing methods of green coffee beans

Dry pre-processing (Natural)

Dry processing – is the most commonly used coffee processing method today. Accordingly, ripe coffee berries after removing impurities will be dried on the rig, in thin layers, turning evenly. The drying process takes about 3 weeks depending on weather conditions. With the dry pre-processing method, the coffee beans will be fully preserved with the natural flavors, which will highlight the chocolate and fruit flavors of the coffee cup.

Wet pre-processing (Washed)

After being harvested, the coffee berries will be put into a meat separator, then put in a soaking tub for fermentation. And finally, wash the remaining meat that clings to the rice husk and then put it to dry. The wet pre-processing method creates a higher flavor quality for the coffee beans. The fermentation process helps to preserve the maximum amount of acid in the pure coffee beans, thereby retaining the natural characteristic acidity of each type.

Honey processing (Honey)

The basic principle of this method is to select ripe coffee from the farmers' orchards and mechanically peel them. After that, the coffee beans will be spread on a high trellis, dried in the sun and covered by a plastic roof. The drying process takes 20-45 days in favorable weather conditions. The honey processing method brings out the fruit flavor, increasing the flavor diversity of the green coffee beans.
